Serves:4 people
Ingredients:1/2 Cup of extra virgin olive oil
3 Cloves of crushed garlic 350 grams of finely chopped, shelled walnuts 3/4 cup of fresh, finely chopped parsley
Pecorino and/or chili flakes for taste Salt and freshly ground black pepper 500 grams of spaghetti Water Directions:Start out by boiling the pasta. While it is boiling, fill a bowl with the olive oil. Chop the walnuts and put them on a hot dry pan for 3-4 minutes, while making sure to toss them around once in a while. Chop parsley and crush the garlic. Then add them along with the salt and pepper, pecorino and/or chilli flakes to the bowl, and stir the mixture blending it thoroughly.
Drain the pasta when cooked, keeping 1/4 cup of the pasta water. Place the pasta in a bowl, add the sauce and mix well. A tablespoon or two of the pasta water can be later be added to moisten the pasta. Recipe courtesy e-rcps, find it here |
